Balsamic vinegar from Modena IGP

Now we are using a lot balsamic vinegar in our cooking. We can use it in salted meals, but in sweets too; not only in dressings. We can deglaze the cooking juices with vinegar, we can add it as a sauce in strawberry salad or we can put in on plates just for style.

Quality of the vinegar is essential. We prefer to use a IGP product (which guarantees the origin from Modena, the original italian region of the product). Don't hesitate to read the ingredients list, sometimes is mentioned the use of caramel as a coloring. It is not bad but it means that you can find a better quality than this one. Prefer to choose a vinegar with only grape must and wine vinegar. More the vinegar will be syrupy, more the vinegar will be better. A good balsamic vinegar can be eaten with a spoon.
