Gaspacho in madness

13/05/2020

You'll have a little more vegetables, won't you? Gazpacho is the star of the summer, it really has everything to please: it is a cold soup that is refreshing and quenches your thirst, it is rich in vegetables and also low in calories. Ideal for a starter or as an aperitif before a good barbecue.

In recent years, the French have come to appreciate this soup from southern Europe in Andalusia, its texture of ground vegetables and its seasoning that reveals the taste of each vegetable. The craze is such that variants of the traditional tomato gazpacho are developing. Creativity is the order of the day and new flavour combinations are coming to life: cucumber goes very well with mint or beetroot, which is subtly spiced up with cumin. How can you not succumb to these delicate, plant-based flavours? This is really the trend of the moment not to be missed under any circumstances!
